Ingredients

For the Peanut Lime Sauce

Instructions
In a small bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, garlic, red pepper flakes, and water until smooth.
Heat oil in a large skillet over medium heat. Add chicken strips and cook until golden brown and fully cooked, about 5-7 minutes per side.
Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
Once the chicken is cooked, reduce heat and pour the peanut sauce over the chicken. Stir well to coat.
Add the cooked noodles to the skillet, tossing to combine and heat through.
Serve hot, garnished with chopped peanuts, green onions, and lime wedges.
Notes
For extra heat, add more red pepper flakes or a drizzle of sriracha.
