Peanut Lime Chicken with Noodles

Ingredients
  

For the Chicken and Noodles

  • 2 tbsp vegetable oil
  • 2 chicken breasts sliced into strips
  • 8 oz rice noodles cooked according to package instructions

For the Peanut Lime Sauce

  • 1/3 cup peanut butter creamy
  • 2 tbsp soy sauce low sodium
  • 1 tbsp honey
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp ginger grated
  • 1 tsp garlic minced
  • 1/4 tsp red pepper flakes optional, for heat
  • 1/4 cup water to thin the sauce

For Garnish

  • chopped peanuts for topping
  • green onions sliced
  • lime wedges for serving

Instructions
 

  • In a small bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, garlic, red pepper flakes, and water until smooth.
  • Heat oil in a large skillet over medium heat. Add chicken strips and cook until golden brown and fully cooked, about 5-7 minutes per side.
  • Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  • Once the chicken is cooked, reduce heat and pour the peanut sauce over the chicken. Stir well to coat.
  • Add the cooked noodles to the skillet, tossing to combine and heat through.
  • Serve hot, garnished with chopped peanuts, green onions, and lime wedges.

Notes

For extra heat, add more red pepper flakes or a drizzle of sriracha.
