  • 1 ½ cups brown or green lentils These hold their shape well when cooked.
  • 1 medium onion Finely chopped.
  • 3 cloves garlic Minced.
  • 2 medium tomatoes Diced (or 1 cup canned diced tomatoes).
  • 3 tbsp olive oil For sautéing.
  • 4 cups vegetable broth (or water) Helps the lentils cook and absorb flavor.
  • 1 tsp salt Adjust to taste.
  • ½ tsp black pepper Adds a touch of spice.

Traditional Moroccan Spices

  • 1 tsp ground cumin A warm, earthy spice.
  • 1 tsp paprika Adds a smoky, slightly sweet depth.
  • ½ tsp turmeric Gives a golden color.
  • ½ tsp ground ginger Adds warmth and aroma.
  • ¼ tsp cayenne pepper Optional, for heat.
  • 1 tsp ground cinnamon Optional, for a subtle Moroccan touch.

Instructions
 

  • Rinse the lentils under cold water using a fine-mesh strainer. Pick out any debris and set aside.
  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onion and cook for about 5 minutes until soft and translucent.
  • Stir in the minced garlic and cook for another minute, until fragrant.
  • Stir in cumin, paprika, turmeric, ground ginger, black pepper, and cayenne (if using). Cook for 30 seconds, stirring constantly.
  • Add the diced tomatoes and let them simmer for 3–5 minutes, until they start to break down.
  • Add the rinsed lentils and vegetable broth (or water) to the pot. Stir well and bring to a gentle boil.
  • Reduce heat to low, cover, and let simmer for 25–30 minutes, stirring occasionally, until the lentils are tender but not mushy.
  • Stir in salt and let the lentils cook for another 5 minutes to absorb all the flavors.
  • If the lentils seem too thick, add a little more broth or water to reach your desired consistency.
  • Garnish with fresh cilantro or parsley and serve with lemon wedges on the side.

Notes

This dish pairs well with warm bread, rice, or couscous. Adjust spice levels to taste!
