Hawaiian Chicken Sheet Pan

Ingredients
  

For the Chicken & Vegetables

  • 1.5 lbs boneless, skinless chicken thighs or breasts Cut into bite-sized chunks.
  • 1 ½ cups fresh pineapple chunks Or canned, drained.
  • 1 red bell pepper Chopped.
  • 1 yellow bell pepper Chopped.
  • 1 small red onion Sliced.
  • 1 small zucchini Sliced (optional).
  • 2 tbsp olive oil For roasting.

For the Hawaiian Marinade

  • ¼ cup soy sauce Or coconut aminos for gluten-free.
  • ¼ cup pineapple juice
  • 2 tbsp honey Or brown sugar.
  • 2 cloves garlic Minced.
  • 1 tsp fresh ginger Grated.
  • 1 tbsp rice vinegar Or apple cider vinegar.
  • 1 tbsp sesame oil Optional, for extra flavor.
  • ½ tsp red pepper flakes Optional, for heat.

For Garnish

  • chopped fresh cilantro or green onions For serving.
  • sesame seeds For extra crunch.
  • lime wedges Optional, for extra tang.

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper for easy cleanup.
  • In a mixing bowl, whisk together soy sauce, pineapple juice, honey, garlic, ginger, vinegar, sesame oil, and red pepper flakes (if using).
  • Add the chicken pieces to the marinade and let sit for at least 10 minutes (or marinate in the fridge for up to 2 hours).
  • On the sheet pan, spread the chopped bell peppers, red onion, zucchini, and pineapple chunks. Drizzle with olive oil and toss to coat evenly.
  • Remove the chicken from the marinade and place it evenly over the vegetables on the sheet pan.
  • Bake for 20-25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are tender.
  • Remove from the oven and garnish with chopped cilantro or green onions, sesame seeds, and lime wedges if desired.
  • Serve hot over rice or with a side of noodles for a complete meal.

Notes

For extra caramelization, broil for the last 2 minutes of baking. Serve with jasmine rice or quinoa for a healthy meal.
