For the Chicken & Vegetables

Instructions
Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper for easy cleanup.
In a mixing bowl, whisk together soy sauce, pineapple juice, honey, garlic, ginger, vinegar, sesame oil, and red pepper flakes (if using).
Add the chicken pieces to the marinade and let sit for at least 10 minutes (or marinate in the fridge for up to 2 hours).
On the sheet pan, spread the chopped bell peppers, red onion, zucchini, and pineapple chunks. Drizzle with olive oil and toss to coat evenly.
Remove the chicken from the marinade and place it evenly over the vegetables on the sheet pan.
Bake for 20-25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are tender.
Remove from the oven and garnish with chopped cilantro or green onions, sesame seeds, and lime wedges if desired.
Serve hot over rice or with a side of noodles for a complete meal.
Notes
For extra caramelization, broil for the last 2 minutes of baking. Serve with jasmine rice or quinoa for a healthy meal.
