Ingredients

  • 2 cups cooked rice preferably day-old
  • 2 eggs beaten
  • 1 tbsp vegetable oil
  • 1 tsp soy sauce
  • 1/2 tsp salt or to taste
  • 1/4 tsp white pepper
  • 1/4 cup green onions chopped

Optional Add-ins

  • 1/4 cup peas optional
  • 1/4 cup diced ham optional

Instructions
 

  • Stir in chopped green onions and any optional ingredients like peas .
  • Heat a wok or large skillet over medium-high heat. Add vegetable oil and swirl to coat.
  • Add the egg-coated rice to the pan and stir-fry for 3-4 minutes until the eggs are cooked and the rice is golden.
  • Season with soy sauce, salt, and white pepper. Continue to stir-fry for another 2 minutes.
  • Stir in chopped green onions and any optional ingredients like peas or ham.
  • Serve hot and enjoy!

Notes

For the best texture, use cold, day-old rice to prevent clumping.
