Ingredients
For the Cloud Eggs

large eggs
Separated into whites and yolks.

For seasoning.

grated Parmesan cheese

Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Separate the egg whites from the yolks, placing the yolks in separate small bowls and the whites in a mixing bowl.
Using an electric mixer or whisk, beat the egg whites with salt and black pepper until stiff peaks form.
Gently fold in the Parmesan cheese (if using) to the whipped egg whites.
Scoop the whipped egg whites onto the lined baking sheet, creating two mounds with a well in the center of each.
Bake the egg whites for 3 minutes until slightly firm.
Carefully place an egg yolk into the center of each egg white cloud.
Return to the oven and bake for another 2 minutes until the yolks are just set but still slightly runny.
Remove from the oven and garnish with chopped chives before serving.
Notes
For extra flavor, add crispy bacon bits or smoked paprika to the whipped egg whites before baking. Serve on toast or alongside a fresh salad.
