Breakfast Burrito

Ingredients
  

For the Burrito Filling

  • 4 large eggs Lightly beaten.
  • ½ cup shredded cheese Cheddar, Monterey Jack, or your choice.
  • 1 cup cooked breakfast potatoes or hash browns
  • ½ cup cooked breakfast sausage or bacon Optional; diced.
  • ¼ cup chopped onions or bell peppers Optional for added flavor.
  • 4 large flour tortillas Warm before filling.

Optional Toppings

  • sour cream, salsa, avocado, or hot sauce

Instructions
 

  • Heat a non-stick skillet over medium heat. Scramble the eggs until just cooked through. Set aside.
  • Warm the cooked potatoes, sausage or bacon, and any veggies you’d like to include.
  • Lay a tortilla on a flat surface. Layer with scrambled eggs, cheese, potatoes, meat, and any other fillings.
  • Fold in the sides of the tortilla and roll tightly into a burrito. Repeat for all tortillas.
  • Optional: Place each burrito seam-side down in a heated pan or oven for 1–2 minutes to crisp the outside.
  • Serve warm with salsa, sour cream, or your favorite toppings.

Notes

Make-ahead tip: Wrap burritos in foil and refrigerate or freeze. Reheat in the microwave or oven for a quick breakfast.
