Ingredients
  

For the Chicken Marinade

  • 2 chicken thighs boneless, skinless
  • 2 tbsp soy sauce low sodium
  • 1 tbsp fish sauce
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 1 tsp garlic minced
  • 1 tsp ginger grated
  • 1/2 tsp black pepper

For the Pickled Vegetables

  • 1/2 cup carrot julienned
  • 1/2 cup daikon radish julienned
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup water

For the Sandwich

  • 2 baguettes split lengthwise
  • mayonnaise for spreading
  • cucumber thinly sliced
  • cilantro fresh leaves
  • jalapeño thinly sliced

Instructions
 

  • In a bowl, whisk together soy sauce, fish sauce, lime juice, honey, garlic, ginger, and black pepper. Add chicken and marinate for at least 30 minutes.
  • Meanwhile, in a small bowl, combine rice vinegar, sugar, salt, and water. Add the julienned carrots and daikon radish. Let sit for at least 15 minutes.
  • Heat a grill or skillet over medium heat. Cook the marinated chicken for 5-7 minutes per side, until fully cooked and slightly charred. Let rest before slicing.
  • Spread mayonnaise on both sides of the baguette. Layer with cucumber slices, grilled chicken, pickled vegetables, jalapeño, and cilantro.
  • Close the sandwich and serve immediately.

Notes

For extra crunch, lightly toast the baguette before assembling the sandwich.
