Toast the bread slices until golden and crisp. Set aside.
In a small bowl, mash the avocado with a pinch of salt and a squeeze of lemon juice if desired.
To poach eggs, fill a small saucepan with about 2 inches of water. Bring to a gentle simmer and add a splash of vinegar (optional).
Crack an egg into a small bowl, then gently slide it into the simmering water. Poach for 3–4 minutes or until the white is set but the yolk is still soft. Repeat for second egg.
Spread mashed avocado over the toasted bread. Top each slice with a poached egg.
Season with salt, black pepper, and optional red pepper flakes or chili oil. Serve immediately.
Notes
Customize with toppings like microgreens, crumbled feta, or everything bagel seasoning. Great with a side of fruit or greens for a full meal.
